Describing Einstein Bros. Bagels as a simple “bagel and coffee place” only scratches the surface. The fast-casual bakery chain has a surprisingly wide selection of vegan bagels (including the all-beloved all bagel) that doesn’t compromise on flavor.
However, the recipe for success among vegan diners is still being refined. Einstein Bros.’s ongoing “schmear” campaign Bagels promoting its many spreads do not yet include a permanent dairy-free selection, and the hummus is no longer available in stores.
Once we get past the limited spread options and frozen vegetable-free sandwich posters, we still have a nice selection of plant-based goodies and satisfying selections.

The menu features the Einstein version of a trendy favorite, with fresh “shredded” avocado on a plain bagel and finished with a spice blend of everything from sesame seeds, poppy seeds, onion, garlic, cumin, kosher salt and black pepper. However, swapping the plain bagel for a toasted onion, sesame, or garlic bagel adds extra punch with little effort.
Avocado and Vegetable Breakfast Sandwich
There’s a lot of flavor on a sesame bagel when topped with tomato, cucumber, red onion, spinach, and lettuce, all held together with fresh mashed avocado. Substitute arugula for leaf lettuce, if available, for a more complex flavor profile.
Apple and cinnamon gourmet bagel and French toast bagel
Gourmet vegetarians, rejoice! These dessert-y bagels are the perfect accompaniment to coffee or tea. The Apple Cinnamon Bagel, listed in the Gourmet category, has a pie-like filling of fire roasted Fuji apples, brown sugar, cinnamon, nutmeg and a crunchy cinnamon streusel filling. The Signature French Toast Bagel (and totally egg-free) is a little simpler, with the crunchy cinnamon topping and brown sugar enhanced with vanilla.
It can be a little disappointing that Power Protein, Ancient Grain, and Whole Wheat bagels are not vegan because they all contain honey. That said, you still won’t be hungry for bagel choices.

For a light breakfast, try the Garden Avocado — avocado, tomato and spinach on an Everything Bagel. Just be sure to sauté the Eggs and Roasted Tomato Shmear. Add onions and other vegetarian toppings to get more for your money.
The only lunch option for vegans is always great: the Veg Out Sandwich. Make sure to skip the Garden Veggie Shmear and swap the Ancient Grain bagel for Pumpernickel, Sesame, or Plain.
How To Find “Shmear” Happiness
Avocados and peanut butter are delicious and filling spreads. However, for some, a bagel is just not a bagel if it doesn’t have any spread or cream cheese. If you fall into that camp, look for dairy-free alternatives the next time you go to the grocery store to get that velvety finish of a freshly baked, perfectly toasted bagel.
