There’s nothing more comforting than a big stack of pancakes for breakfast. Choosing to follow the Keto Diet doesn’t mean you have to give it up. Our recipe is super easy and will certainly satisfy your cravings.

Many keto pancake recipes basically use two ingredients: eggs and cream cheese. They’re not bad, but they’re a little hot and a whole lot hotter than we like. The almond flour makes these pancakes a little more doughy and the lemon zest adds another layer of flavor that makes them completely irresistible.

I don’t smell lemon. What else can I flavor these pancakes with?

If you’re not a fan of lemon, you can add a teaspoon of vanilla or maple extract instead. You can even make them tastier by adding a little parmesan or cheddar cheese and a sprinkle of dried herbs like oregano. You might even go a little crazy and add chili flakes.

Why are my pancakes grainy?

We love the nutty flavor and doughy texture that almond flour gives to these pancakes, but we’re also aware that using coarser almond flour can make them a bit grainy. To avoid this, be sure to use almond flour (as opposed to almond flour) and look for the finest grind possible. You can even sift your almond flour, if there are any coarser bits you’d like to remove.

What can I garnish these pancakes with?

Most typical pancake toppings aren’t allowed on the Keto diet, but that doesn’t mean you can’t take your pancakes to the next level. Try sprinkling them with toasted unsweetened coconut, drizzling them with melted unsweetened peanut butter, or topping them with a handful of berries. You can also consider cooking your toppings inside the pancakes: try sprinkling with freshly made bacon bits or keto chocolate chips just before flipping.
