Boca Raton’s original creperie cited by health inspector

THE ORANGES HAVE NOT been washed before being squeezed in the juicer.

Four “high priority” violations during the inspection in early April.

The Original Pancake House in Boca Raton was cited by the Florida Dept. of Business and Professional Regulation.


BOCA RATON, FL ( (Copyright © 2022 MetroDesk Media, LLC) – It was not ordered to close, but a Florida Department of Business and Professional Regulation inspector was so concerned about what was allegedly found at the Original Pancake House at 8903 Glades Road an almost immediate follow-up inspection was ordered.

The April 4 inspection revealed the following infractions. Per policy, we publish these violations as written and filed with the State of Florida, without modification.

HIGH PRIORITY – Time/temperature control for safety food cold maintained above 41 degrees Fahrenheit. Observed delivery of individual creamers 47°F (labeled refrigeration required) stored in a non-functional cooler. The manager says they were received this morning 2 hours ago. The director has moved into the cold room. Ham (47°F – Cold Hold), Turkey 47°F, Cheese 47°F, Prep Cooler Manager declared less than 3 hours. Ambient temperature in cooler 47°F Manager placed all items on ice. The service technician worked on the chiller during the inspection. **Corrective Action Taken** **Warning**

High Priority – Time/temperature control for reheated safety foods for keeping warm not reaching 165 degrees Fahrenheit for 15 seconds in 2 hours. High Priority – Time/temperature control for safety foods, other than whole meat roasts, kept hot below 135 degrees Fahrenheit. Clarified butter 125°F for 1.5 hours, the manager said. Cook the clarified butter heated to 165°F. **Fixed Correct** **Repeat Violation** **Warning**

A follow-up inspection later that day on April 4 revealed no violations. The original creperie was never ordered to close following the initial inspection.
