When fall arrives we often think of pumpkins and apples, but it’s grape season too! And what better way to enjoy those plump red globes than in a popular breakfast dish. This baby dutch raisin, or german pancake, is a nutritious and filling meal that is just a little sweet for a special treat. We originally published this recipe a few years ago, but we’ve made a few updates!

What is a Dutch baby pancake?

A Dutch baby is sometimes called a German pancake, a Bismarck, or a Dutch puff, but in reality it is a large popover that originated in the United States.It is usually made with eggs, flour, milk, and butter, but I made this Dutch Baby Grape Dairy Free.

I like to think of Dutch babies as bulletproof soufflés because they are expected to fall! They swell in the oven but deflate completely on cooling.

Some of my personal dairy and gluten free recipes inspired by traditional Dutch babies include this Maple Dutch Baby with Blueberry Sauce, Healthy Dutch Baby Cinnamon Apple, and Smoked salmon quiche without crust.

You can enjoy a Dutch baby for breakfast, brunch, lunch, or even dessert, but they’re usually not overly sweet. You can keep them salted, add fruit, or sprinkle with powdered sugar or syrup. The dough itself is often unsweetened, as in this recipe from Grape Dutch Baby.

Please note that the new images shown are of the ‘thick’ version of Dutch Baby. The thinner main version seems less “mushy” than this one.

For gluten-free Dutch baby grape, you can substitute the flour with your favorite gluten-free all-purpose flour blend. A paleo mix can work too, but it will definitely be more dense.

  • 3 large eggs
  • ⅔ cup all-purpose flour or wheat flour
  • ⅔ cup of dairy-free unsweetened milk drink
  • ½ teaspoon of vanilla extract
  • ¼ teaspoon of salt
  • 2 tbsp + 3 tbsp dairy-free butter spread, divided
  • 2 cups red grapes, halved
  • 2 tablespoons of brown sugar (can replace coconut sugar)
  • ⅛ teaspoon ground cinnamon (optional)
  • Powdered sugar, for serving (optional)
  1. Preheat your oven to 450 ° F and put a large (10 inch) cast iron skillet, baking pan or 9 inch pie pan in the oven.
  2. Crack the eggs into a mixing bowl and beat with a mixer on high power until the eggs are frothy. Add the flour, milk drink, vanilla and salt and beat until smooth, about 1 minute. The dough will be fine.
  3. Remove the pan from the oven (use an oven mitt!) And add 2 tablespoons of the spreadable butter, stirring to cover the pan. Pour the batter and return the pan to your oven. Bake until puffed and golden, 14 to 19 minutes.
  4. While the pancake is cooking, melt the remaining 3 tablespoons of butter in a skillet over high heat. Add the raisins, brown sugar and cinnamon (if using). Cook until the raisins are heated through and the sugar is melted.
  5. Pour the raisins over the pancake and sprinkle with powdered sugar (if desired) to serve.

Thick Dutch Baby Option: To make Dutch Baby batter, mix 6 large eggs, 1⅓ cup flour, 1⅓ cup non-dairy milk drink, 1 teaspoon vanilla (or keep it at ½ teaspoon) and ½ teaspoon salt. All other ingredients stay the same, but that makes 4 servings.
