Easy Coconut Rum Shell Cake Bites Recipe Celebrates Summer | Cakes/Cupcakes

Here’s how to do it:


  1. Prep the Seashell Bites Pan pan with cooking spray containing flour and use a pastry brush to evenly coat the details of the pan. Melt the butter and let cool. Spread the coconut evenly on a small rimmed baking sheet and bake at 350 degrees F, 3 to 5 minutes, stirring once or twice, until the coconut is golden brown and toasted. Leave to cool slightly in the pan then break into small pieces using the back of a wooden spoon.
  2. In a medium bowl, whisk together flour, baking powder, baking soda and salt. Whisk cooled coconut. In the bowl of a stand mixer using the paddle attachment, beat the melted butter and sugars until combined. Add coconut milk and egg and mix until combined. Add the extracts and the rum and mix. Add flour mixture, half at a time, mixing between additions and scraping down sides of bowl as needed.
  3. Pour the batter into the cavities of the mold until it is slightly more than half full. Spread the dough in the corners of the cavities with a small spatula. Gently tap the pan on the counter covered with a towel to remove any air bubbles. Bake for 10 to 12 minutes or until edges are lightly browned and cakes are firm to the touch. Let cool in pan for 5 minutes, then invert onto a cooling rack to cool completely. Clean pan, prep with cooking spray and repeat with remaining batter.
  4. To make the icing, mix the powdered sugar, pineapple juice concentrate and rum until smooth. When the shellfish bites are cooled, dip each cake halfway into the frosting and place on a rack on top of a baking sheet, frosting side up.
