How to make oatmeal pancakes at home


  • 1-1/4 cup all-purpose flour
  • 1/2 cup oats
  • 2 teaspoons of yeast
  • 1/4 teaspoon salt (optional)
  • 1-1/4 cups fat-free milk
  • 1 egg, lightly beaten
  • 1 tablespoon vegetable oil

  • For the blueberry pancakes: 1 cup fresh or frozen blueberries (do not thaw)
  • For the banana pancakes: 1 medium ripe banana, mashed and 1/8 tsp ground nutmeg
  • For the Apple Cinnamon Pancakes: 3/4 cup finely chopped apples, 1/4 cup chopped walnuts and 1/2 tsp ground cinnamon
  • For the chocolate chip pancakes: 1/2 cup semi-sweet chocolate chips

Cooking instructions

In large bowl, combine flour, oats, baking powder and salt; mix well. In another medium bowl, combine milk, egg and oil; mix well. Add liquid ingredients to dry ingredients all at once; stir until dry ingredients are moistened (do not over mix). Add one of the blend options, if desired; mix gently. Heat skillet over medium-high heat (or preheat an electric skillet or griddle to 375°F). Lightly grease the pan. For each pancake, pour 1/4 cup of batter into the hot pan. Flip when top is covered in bubbles and edges look cooked. Turn once. Serve & enjoy!
