Jersey Girl Bagels to open shop in Sarasota-Manatee
A local business that makes New Jersey / New York-style bagels is about to open its first storefront.
‘Coming soon’ signs are in place for Jersey Girl Bagels at 5275 University Parkway on The Market in UTC Square which is also home to Kohl’s, The Fresh Market, and several restaurants, including a new upcoming location for the national chain of Mission BBQs. BBQ.
The plans are expected to open by fall, said Kim Fishman, a Lakewood Ranch resident who started making bagels from her home about a year ago and has since grown a following.

As the name suggests, Fishman was born and raised in New Jersey, spending time in New York as well. She moved with her husband from Wayne, New Jersey about five years ago and loves Florida, she said, missing two things about Jersey: the people and the food. When she couldn’t find the type of bagels she was looking for, she started making her own.
âI started doing it really as a hobby, which made people want to buy them for their friends and family, and then I started taking orders,â Fishman said. âAt this point we are moving forward with the showcase because we just have capacity issues. Making bagels is quite a complicated process. So doing this from home with household equipment, refrigerators, ovens, it’s not easy to do in mass production.
The bagels are made from scratch with special filtered water and refrigerated overnight for a slow rise cold. In the morning, the bagels are boiled in a pot, placed on wet burlap bagel boards and turned over on a hot stone to finish cooking, Fishman said.
Jersey Girl Bagels offers classic varieties like plain, poppy, onion and all, as well as specialties like rainbow and French toast, and plans to offer 12 types in its UTC storefront.
The store will sell bagels and other baked goods such as black-and-white muffins and cookies, as well as breakfast sandwiches, including New Jersey’s favorite Taylor ham and egg platters. It also plans to be open for lunch, serving cold sandwiches as well as hot dishes.
Jersey Girl Bagels will offer a handful of indoor and outdoor tables at its casual counter service store, Fishman said, with a focus on take-out. It will join other food and beverage companies in the UTC market including Yaki Sushi Grill BBQ, Vietnamese BÃºn-Haus Kitchen, Pascone’s Ristorante, Thai Seed, Tijuana Flats, Buffalo Wild Wings and Clean Juice.
