Pancake Day 2022: How to make a classic lemon and sugar pancake

Classic crepe with lemon and sugar
100g plain flour
Pinch of salt
1 large egg
2-3 teaspoons of Trex
Caster sugar or golden syrup
- Sift the flour and salt into a large bowl. Add the egg and milk and beat with a metal whisk or an electric hand whisk to obtain a smooth batter.
- Heat a small pancake pan or heavy-bottomed skillet, then add a small walnut of Trex, swirling it around the pan until it melts. Pour a thin stream of batter, tilting the mold so that it flows evenly over the entire surface. Cook over medium heat until set, then flip the pancake to cook the other side.
- Cook eight small pancakes in all, adding a little Trex to the pan before cooking.
- Serve immediately with lemon wedges and sprinkle powdered sugar or golden syrup on top.
