Pizza Spicy Pig Patty @ Audrey Jane’s Pizza Garage


We understand the appeal of New York style flat pizza, but we grew up calling it “New Haven” due to a long-standing regional conflict. Now when we grab a pizza my sister and I go for the more substantial square baked pizzas that we call ‘Sicilian’. Some call them “a la Detroit”, but they are mostly Michigan supporters. These homemade pies are not deep enough to be considered “Chicago style” or, locally, “mountain pies”.

While New York-style, Sicilian pan and gluten-free pizzas are served at Audrey Jane’s Pizza Garage, 2675 13e St., we turned to the pizzeria’s unique “pancake style” sesame seed crust baked in a square pan.

We ordered the Spicy Pig combo and asked for the pie to stay in the oven for a few more minutes. The 30 minute wait was well worth it. The slow fermentation, olive oil, cheese, and high heat made the four corners worth fighting for, but each slice of sesame seeds was a new taste revelation that any fan of artisan breads or of sesame bagels would include.

On top of all that crust were cups of pepperoni, chunks of hot sausage, roasted jalapeños, and fresh garlic nestled between the crushed tomato sauce and mozzarella. This pizza didn’t need red pepper flakes for extra punch.

The Pizza Garage is tucked behind the mall that includes Breadworks, the Boulder Wine Merchant, and Moe’s Bagels, the latter operated for decades by the parents of Boulder-born pizzeria owner Audrey Kelly.

The Pizza Garage offers take out pies and slices in different styles from two large windows with patio seating. The restaurant also produces an acclaimed grilled meatball chopper in a homemade bun. Other pizza topping combinations include the Grateful Veg with Pumpkin Seed Pesto, Spinach, Mushrooms, Onions, Sweet Peppers and Mozzarella, and the self-describing Pretty Fly for a White Pie. .

What to do with too many red onions

The image in the photo above does not represent an alien life form or a seafood form. This is what happens when you put a whole, fresh, unpeeled red onion in a 375 degree oven for More than an hour. Every time I turn on the oven to bake something, I also put a potato, sweet potato, Asian eggplant, or onion on an old pie pan. It saves energy and I end up with ready-made ingredients.

Normally onions roast and steam inside their skins and give off steam and juice – this was the first time an onion had exploded so dramatically in my oven. I still ended up with some lightly roasted onions which I used in hash browns and a pan of quick chicken. This non-technique also works well with white and sweet yellow onions.
