Recipe: Confit Pork Belly Bites

Bill E. Stitt of Bill-E’s restaurant is in the kitchen of Studio 10 and prepares bites of confit pork belly served with different sauces. They are perfect for an aperitif or a festive meal. Bill E. recommends serving a different dip with bites for each quarter of a football game.

INGREDIENTS:

  • 6 bites EA Confit Pork Belly
  • 1 ounce barbecue sauce
  • Spicy Buffalo Sauce 1 OZ
  • 1 OZ Sweet Chilli Sauce
  • 1 OZ extra sauce if serving four quarters of game
  • 1 EA pickled egg cut into 4 pieces
  • 0.25 oz fresh rosemary

NOT:

Preparation: Using unsliced ​​BILL-E Bacon, cut into small bite-sized squares. Place squares in baking dish and coat with bacon grease and Dr. Bill’s Cane Maple Syrup.

To cook: Place the dish in the oven set at 250 degrees for 2.5 hours. Remove and chill in the fridge overnight.

Service time Heating: Return to oven at 350 for 30 minutes. Use a spoon or ladle to baste the bites more.

To assemble: For the appetizer: Stagger the bites on the plate and cover two with each sauce. Place the marinated egg pieces around the bites and garnish with rosemary.

For the party platter: Stagger the bites onto a nice cutting board and place your favorite dip next to the bites with toothpicks.
