Smokin’ Joe Lasher Bratwurst Bites with German Mustard Dip

Preparation time: 15 min Cooking time: 25 min Servings: 24 bites


  • 5 Bratwursts
  • 1 tablespoon vegetable oil
  • 1 tube of unperforated crescent roll sheets
  • 1 large egg
  • 1 tablespoon of water
  • 1 tbsp poppy seeds
  • 3 tablespoons ground mustard
  • 1 tablespoon spicy brown mustard
  • 1 tablespoon prepared horseradish
  • 1 tablespoon of your favorite German beer
  • ½ teaspoon red pepper flakes
  • 1 salt & pepper to taste


1. Preheat oven/smoker to 375°F

2. Cut the brats into 1″ pieces, to make 20-24 pieces.

3. Heat skillet over medium-high heat. Add the vegetable oil then add the bratwurst pieces and cook well.

4. Remove the cooked bratwurst and place it on a paper towel to cool.

5. Unroll crescent sheets and cut in half lengthwise, then cut into ½”x6″ strips.

6. Wrap each piece of bratwurst with a 6″ strip and place on a baking sheet lined with parchment paper.

7. In a small bowl, whisk together egg and water. Brush each piece of bratwurst with a small amount of egg wash. Avoid putting too much! The stings will stick to the board if you do.

8. Sprinkle each bite of bratwurst with poppy seeds and bake/smoke for 15-20 minutes until crescent dough is golden brown.

9. While bites cook/smoke, mix mustard, spicy mustard, horseradish, beer and red pepper flakes together thoroughly. Add salt and pepper to taste !

10. Serve the bratwurst bites hot or at room temperature with the spicy mustard sauce!
