Three Ingredient Rice Pancake Hack


We love a simple recipe with just a handful of ingredients to 9 Honey Cooking Hacks, that’s why this three ingredient rice cake trick is perfect. Kids love them, you can make them in minutes, and they’re fun too.

Today we use Ben’s original Microwave Coconut Chilli Lemongrass Rice, both because it’s quick and easy, and also because the flavor works great for this trick. The coconut in the recipe adds a slightly sweet touch to these pancakes, so you can serve them salty or sweet … but my money’s on the sweet with maple syrup.

  1. Microwave the rice according to package directions, making sure to break up the rice in the bag so there are no lumps. Let cool a little then stir in the grated coconut.
  2. Beat your two eggs then mix them well with the rice.
  3. Heat a nonstick skillet over medium heat and add ½ teaspoon of coconut oil. Add large spoonfuls of the mixture to the heated skillet and flatten to about 2 cm thick. Cook over medium heat (not too high) until the egg sets. Using a large, flat spatula, flip the pancakes and cook the other side until golden brown. Serve stacked with maple syrup and (optional) crispy bacon.
